This simple meal is tastier and more nutritious than a high priced steak dinner from a fancy restaurant. Yes, this is said to be a poor man’s meal, but this is the meal that I was raised up on. Mix together: Ground Sirloin, Egg, Chopped fresh Rosemary, Italian seasoned breadcrumbs, Grated onion, Grated fresh parsley. Add Italian Green Beans and fresh mushrooms on one side. Place small multi-colored potatoes around the formed meatloaf. Bake at 350° for 1 hour uncovered and ½ hour covered in a glass baking dish. However, with our COVID schedules of eating most every meal at home, we are finding that va- riety is hard to come by and so I make my own lunch sometimes, and I think I have eaten more peanut butter and jelly sandwiches than I did as a kid.
