Good News - August 2020
This month Good News Wants to Know... Who is the cook in your family and what's your favorite dish? My wife Trish is the Chef. Her par- ents immigrated here from Italy, and Trish has been surrounded by great cooks and restaurant owners as well. She makes incredible soups and pasta dishes! Charles L. Bender III, Founding CEO, Board Member, PLACE OF HOPE We have many great cooks and bakers in the family! My Great Aunt passed down a Macaroni and Cheese recipe, the best I have ever had. My Mom has taken over the recipe and I thank God, we all look forward to it, even my friends. It’s a little piece of heaven on earth, lol! Ariana Reid, Executive Director, Hope Women's Centers My wife Jenny plans the meals and I cook them. One of my favorites to make is chicken parmigiana. I use crushed tomatoes instead of tomato sauce and it makes a huge difference! Beau Heyman, Executive Director, First Care Women’s Clinic Jane and I are empty nesters so to cook for two has lost the appeal of cooking for the family. As a result, our favorite recipes are created at places like The OB House, Doc B's and Il Mulino (the garlic rolls are over the top!). William “Bill” C. Davell, Director, Tripp Scott Attorneys at Law Dani is the cook in the family. She’s able to create cooking show meals out of thin air. She’s also great at making the feel good stuff. Nobody in the world makes a better chicken soup. Nobody makes better pancakes. Sorry mom. ☹ Bob Denison, President, Denison Yachting My wife Wendy is definitely the cook. I do the grilling (burgers, dogs, steaks, etc.) but she is the cook. Some of my favorite meals that she cooks are Creamy Chicken Casserole, Baked Ziti, Southwest Taco Bake and Baked Chicken. She also serves up a great breakfast of egg, potato, bacon and cheese casserole along with overnight French toast and monkey bread. One thing that we have enjoyed during the quarantine has been a lot of home-cooked meals! Chris Lane, Executive Director, First Priority of South Florida All the Forman’s are cooks! We all share in meal planning, preparation and consumption, which is a BIG family pastime! We love to try new foods, and we make a big mess when we do. When we get the kitchen back togetherish when it’s all done, we almost always have ice cream for dessert AND baked goods from Sweet Rustic Bake Shop where our daughter Alyssa works. H. Collins Forman, Jr., P.A. Well, we both cook, but the primary cook in the family is me. I love cooking anything, but the most requested dish from family members is grilled skirt steak with a Lime Jalapeño bath brine. Melts in your mouth. Yum! Craig Huston, Huston Consulting Group, LLC I wish I were "the cook" in our family, but sadly, I am not. That is not one of my gifts. During this period of isolation, my sister has been an encouragement to our family. She has been cooking meals and separating enough for each household. What a blessing! My favorite dish she makes is lentil soup. It's so hearty and de- licious. For those of you who cook, make a little extra, and bless a neighbor, a friend, anyone. Everyone loves a home-cooked meal. Cynthia J. Arevalo, Esq., Attorney & Counselor at Law, Law Offices of Cynthia J. Arevalo Primarily, I'm the cook in my unusual household where international students come and go year to year. They're usually interested in learning how to make American specialties, but it's more interesting to share one of their recipes. Cur- rently, I have a lovely, young Russian gal living with me. She has surprised me with some unusual dishes, like her "fish cake". I'll spare you that recipe. Her Russian Beet Salad: Boil, until soft, then finely chop: 2 large beets; 3 large potatoes; 3 large carrots. Chop 3 dill pickles, a bunch of fresh parsley, a bunch of fresh dill, a small shallot. Add 1 can of sweet peas, drained. Mix and add olive oil and salt to taste. Deborah Cusick, FAU Campus Volunteer, Intervarsity Christian Fellowship The cook in our family is my husband, Bob Gerstmyer. His special dish is crockpot barbeque chicken. Dr. Debra A. Schwinn, President, Palm Beach Atlantic University Who is the cook in my family and what's the favorite dish? On a regular basis, it is my bride. She couldn’t cook a lick when I married her out of college, but she is a real pro after 24 years. Breaded Chicken Marsala with extra mushrooms is my fav! Once every 3 weeks it’s Dad’s Sunday Sauce, scratch and slow cooked for 6-8 hours in the crockpot! Whole house smells of garlic from 7:30 a.m. until after church and late into the evening. Dennis DeMarois, CEO/Executive Director, Gathering Palm Beach While I was the family cook years ago, it seems that my husband, bless him, has taken the lead role on this, especially during the COVID-19 era. With just the two of us, we ate out too much, actually. I do the slow-cooker recipes, and will make veggies if he grills. But, he is the lead chef for us right now. Dolores King-St. George, President, King Communications and GraceNet Radio Cooking is not in my wheelhouse, but my wife is an awesome cook and able to make a great meal when the fridge looks empty. One of our favorite meals is baked salmon teriyaki, grilled asparagus and garlic spinach. Any flavor ice cream tops off this magical meal. Don Campion, President, Banyan Air Service Laurie and I share the cooking duties most nights. We love fresh fish on the grill, usually grouper or swordfish, and she fixes the side dishes, usually a veg- etable and rice. We cook the fish on foil with seasoning and cooked very slowly. It helps keep the moisture in the fish and lets the seasoning get into the meat. Fred Scarbrough, DVM, Founder, Scarbrough Animal Hospital and Hope South Florida In recent years I’ve been doing most of the cooking – short order style, easy prep items heated on the stove, zapped in the microwave, or broiled in the oven. My wife worked excessively long hours in healthcare while I was home doing class Wants to Know… Charles L. Bender Ariana Reid Beau Heyman William “Bill” C. Davell Bob Denison Chris Lane H.
